Fully responsible for the planning, auditing and improvement of campus food hygiene, safety and environment, daily supervision and audit all supplier’s operation in compliance with government regulations and laws, responsible for responding to FDA audits and maintaining good communication with FDA.
Role & Responsibilities
- Perform food safety & QA audits.
- Monitor document recording system: audit forms and related records that conform to all food standards and national regulations, ensure the food service is in accordance with campus food standards and specifications through daily supervision and audit, follow up the action points from the audit.
- Monitor food safety quality and hygiene management system.
- Monitor sourcing and follow of purchase orders with the food service provider. Discuss and resolve any quality issues with suppliers in conjunction with the service provider.
- Work closely with local FDA, attending meetings, training and on-site visits as required.
- To cooperate with all FDA inspections, working with Line Manager(s) to formulate & act upon action plans.
- Work with School and catering service provider to ensure licenses are always up to date & renewals managed in a timely manner.
- Work with Line Manager(s) & Facilities & Operations team to ensure all facilities are always maintained at the highest level.
- Provides dedicated service, monitoring and supervision of the third party catering supplier to ensure the health and safety, nutritional values, choices and presentation are at the highest level possible.
- Work with the Front of House Supervisor supervising the food sevices on the DUCKS, Junior School & Senior School Campuses.
- Work with the Cater Provider for the catering requests for all events.
- To supervise and monitor the full cycle of restaurant operations including but no limit to the goods received in the early morning,
- Supervision of food sampling, food labelling.
- Ensure the required data is uploaded onto the appropriate system on daily basis, such as: sunshine Lunch Platform and other required information systems.
- Liaison with Intertek, the external monitoring agency as required.
- Supervise Nurse Food Monitoring Arrangement across the DUCKS, Junior School & Senior School campuses, providing a report on a weekly basis.
- Work with the catering service provider to ensure the training, recording and reporting meet the requirements from relevant policies and regulation plus the additional School training requirements.
- Liaise with the Catering Service Provider to ensure training is continual and appropriate with emphasis on food health & safety, food hygiene, best practices and menu development. Providing a termly report to the Head of Operations & Facility.
- Is a member of the DCS Nutrition Committee
- Work closely with the third party to implement the infectious Diseases Prevention Management with nursing provision, attending meetings, training and on-site visits as required. Other support requested by the Line Manager Any reasonable request made by the line manager that ensures consistent delivery of service to the College (including emergency Bus Monitor cover duty where required)

Requirement
Essential
- Degree in food science/food technology or related food quality inspector certification.
- Minimum 3-5 years working experience in food QA & QC role good knowledge of food quality and safety control familiar with ISO 9001/ISO 22000 quality system is preferred. Familiarity with FDA Regulations.
Fluent in both Chinese and English with strong communication skills in both languages effective interpersonal skills, excellent organizational and time management skills proficient at Microsoft office.

Working Hours:40 hours per week (Term-time only)
- 8.00am – 5.00pm 4 /3 days per week
- 6.00am – 3.00pm 1/2 day per week

- 11.30am - 12.30pm Toddler, Nursery and Reception Lunch time
- 12.00pm - 12.30pm Year 1 Lunch
- 12.30pm - 1.00pm Year 2 Lunch
Junior School 502 students (age 7-10 Year 3 – Year 6)
- 11.45am - 12.40pm Lunchtime
Senior School 578 students (age 11-17 Year7 – Year 13)
- 12.40pm – 1.40pm Lunchtime
Many and varied events are run by or hosted by the College, most of which have catering requirements.
