Director of Food & Beverage
Are you a passionate foodie who is not afraid of thinking outside the box? Then, we have the job for you! As Director of Food & Beverage, you will strategically lead the team to take guest satisfaction to the next level.
Reporting to the General Manager your duties will include;
- Directly responsible for the following areas in regards to all issues of Guest Satisfaction, Colleague satisfaction, GOP and H&S: La Cucina, Squire Restaurant, St Andrews Bar & Grill, Atrium lounge, Kittocks Den, Zephyr bar and IRD
- Development, implementation and follow-up of various food and beverage projects such as point of sale systems, annual F&B goals, renovations and signature service initiatives.
- Assist F&B outlets in the development of specific action plans to address areas of improvement identified in the hotel's Employee Satisfaction Index, JDP, departmental service audits and external service audits.
- Ensure all F&B areas are compliant with Fairmont Hotels & Resorts’ Food & Beverage service standards and FRHI finance and accounting policies.
- Ensure Quarterly Marketing and Promotion calendar is completed for all restaurants and bars to ensure revenue opportunities are maximised.
- Continuously analyse the Food and Beverage operations to develop and implement new proposals positively affecting revenues, expenses, productivity and efficiencies.
- Ensure that monthly financial obligations to budgets/forecasts for food & beverage revenues, expenses and productivity are accurate and on target.
- Assist in the creation of the annual F&B budget and complete the monthly forecast updates.
- Working with the hotel’s training team; oversee the continuous review and updating of service training and leadership development in all areas of food and beverage.
- Assist with the co-ordination and administration of Food and Beverage and Hotel training projects including all legislated training.
- Ensure the hotel is compliant with all liquor license regulations as well as all environmental health regulations.
- Responsible for the creation and maintenance of all F&B menus.
- Work together with the Executive Chef on all areas pertaining to food menus; including ensuring all menus are costed as per FRHI finance and accounting policies.
- Oversee ordering, inventories and beverage controls as well as maintain the development of the hotel’s wine collection
- Responsible for all F&B purchasing
- Be an active member in the hotel leadership group meetings and duty manager program.
- Ensure presence on the floor and assist outlet leaders and employees when needed
- Ensuring heart and front of the house are clean and well maintained - maintain effective preventative maintenance program for all kitchens and restaurants
- To take responsibility for the Food & Beverage operation in all restaurants and bars, allocating appropriate staffing and monitoring Fairmont standards
- Other duties as assigned

Your experience and skills include:
- Service focused personality is essential and previous leadership experience required
- Proven ability to build and maintain good relationships with all stakeholders
- Communicate thoughts, actions and opportunities clearly with strong networking skills
- Ability to lead by example, believe in a strong team culture and set the scene for high performance
Your team and working environment:
- Working in a fast-paced operational department you will be required to work 5 days out of 7 which will include evenings and weekends.
