Job Description

Sommelier

The Sommelier will be responsible for the wine education of all F&B service colleagues, sourcing new products and keeping up to date with offers as well as guest tastes and requirements. You will control and maintain stock levels in the main cellar and in the venues as well as maximize sales, identify opportunities and create a wine culture in the hotel in order to enhance revenues. Fully responsible for the monthly inventory and always keep the budget cost in line.

What you will be doing:

  • To provide the most personalized service for our  guests with choice of wine that suit the best their expectation as well to take the appropriate orders.
  • To ensure that proper mis-en-place is prepared for each service.
  • To organize the service of beverages along with the correct accompaniments, using the correct equipment, glasses and decanter.
  • Ensuring of highest quality service standards during operations
  • Organize weekly training for the team to ensure knowledge strengthen for the waiters.
  • Help minimize waste, neglect, breakages and mishandling of supplies and equipment.
  • Carry out light cleaning and maintenance of restaurant.
  • Supervise maintenance of service standards.
  • To ensure the wine stock is well maintained and organized.
  • To update the cost price, selling price and ensure the beverage cost is in line with the set target.
  • Constant improvement of the wine offer and its pricing to be propose to executive chef.
  • To be actively involved in operations during the service periods.
  • Regularly inspect opened wine quality in all venues.
  • Daily inspection in all venue to ensure the stock as well as quality of potential open wine.
  • To work closely with all the staff together to achieve set sales targets.
  • Able to account and handle cash effectively, efficiently, with integrity and follow Driving revenue in the venue and maintain cost within budget.

Your experience and skills include:

  • Minimum of 5 years of relevant experience as sommelier
  • Great Knowledge on wine & champagne
  • Certification WST level current 
  • Great skills on handling guest challenge and opportunity
