Job Description

Chef de Partie manage a particular section or area in the kitchen relating to food production. They organize the activities of the junior cooks and are able to work in a fast-paced, high pressure environment to deliver their station menu items on time. Prior culinary experience required.

PRIMARY RESPONSIBILITIES:

  • Prepare for shift
  • Have thorough menu, product, portion control and preparation knowledge
  • Clean and maintain kitchen service through service period
  • Maintain working order of equipment and workspace at all times
  • Correctly date and store food, sanitize equipment and take other measures to ensure integrity and food quality
  • Prepare ingredients for cooking including but not limited to portioning, chopping and storing food
  • Apply culinary skills to prepare meals, with flavour, ingredients, temperature, presentation and quality consistent with standards and guest expectations
  • Use equipment skilfully by following correct safe procedures e.g. knives machines
  • Arrange food attractively according to outlet concepts and final check the meals before serving to guests
  • Prepare and maintain stock, back up supplies and operating equipment to meet anticipated demand
  • Supervise and coach Demi-chef de Partie/Cook 2 and Commis/Cook 3
  • Always work in a professional manner that reflects a good role model to others
  • Share thoughts, feelings and rationale as appropriate to give clear understanding for action taken
  • Adhere to all Company policies and procedures
  • Report accidents, injuries and unsafe work conditions to direct supervisors
  • Maintain positive relations with other staff and departments
  • Capable to perform repetitious duties
  • Ensure highest standard of hygiene is maintained by following HACCP guidelines at all time
  • Perform other reasonable job duties as assigned by direct supervisors from time to time

Qualifications


Experience

  • 2 years working experience with minimum 1 year in Demi/Chef de Partie/Cook 2 position

Skills / Competencies

  • Must be able to work indoors and be exposed to various environments such as, but not limited to noise, dust and cooking fumes
  • Valid Macau ID card holder for local application
  • Follow the correct safe manual handling and lifting techniques
  • Ability to move, lift, carry, push, pull and place objects weighing less than or equal to 11 kg on frequent basis without assistance
  • Ability to move, lift, carry, push, pull and place objects by following the correct safe manual handling and lifting techniques with the assistance of a 4 wheel trolley
  • Ability to stand and/or walk for an extended period of time during the shift
  • Ability to work on flexible shift including overnight, weekends and holiday on rotation basis
  • Ability to work on overtime when needed
  • Ability to read and communicate in Cantonese or Mandarin or English

Advantageous Skills

  • Good interpersonal / presentation skills are preferred
