Duties and Supporting Responsibilities
Provide professional support to Food and Beverage operations in the following:
- Foster positive thinking and motivation within all Food and Beverage outlets by giving active assistance and advice on more effective ways of running the outlets. Encouraging positive contributions from all members of the team.
- Plan and execute activities, promotions, menu implementations according to the annual marketing plans.
- Work closely with the hotel’s PR, Marketing, Events and Sales Teams.
- Ensure that all designated action points from daily briefings or bi-monthly operational meetings are being followed by the individuals concerned.
- Ensure that positive working relations with all other non-Food and Beverage departments are fostered giving cooperation at all times.
- Daily preparation of all function food inclusive of outside catering and outlet.
- Work with Executive Chef to maintain food hygiene and cleanliness according to HACCP standards.
- Plans and prepares the duty roster on a weekly basis.
- Supervise outlet managers to conduct on the job training for junior colleagues and trainees.
- Ensures that manning level are realistic and at its optimum level.
- Handles interviews; disciplinary cases and any other duties, which may be assigned from time to time.
- Be aware of and comply with all legislation affecting the operation, including licensing regulations, health regulations and fire and safety regulations.
- Prepare annual business plans as well as marketing plans and budgets.
- Ensure disciplinary and grievance procedures are properly adhered to and followed.
- Handle customer comments and complaints and take swift corrective action.
- Be responsible for and accountable for the departmental operating budget.
- Find ways of maximizing and increasing sales and/or yield (in revenue centres).
- Yearly F&B budgets, monthly, weekly and daily forecasts are timely and accurate.
- Complete detailed checks of the entire Food and Beverage operation during all service periods taking necessary actions to correct any deviation from quality standards.
- Carry out projects and assignments as requested by the General Manager.
- Prepare and control wine and beverage lists.
- Conduct daily hotel tours to observe operational standards and difficulties and
follow them up with the relevant Managers.
- Propose and initiate when approved, new services and products for our guests.
- Perform any other reasonable duties as required by the General Manager from time to time.
- Cooperate with and drive forward the implementations of Mandarin Oriental Legendary Service Training in all Food and Beverage outlets through close follow up with outlet Managers.
- Assist and monitor all other training activities in the Restaurants and Bars of the hotel.
- Identify and regularly review the classification levels of all your information with your department.
- Ensure that the information and information security equipment assets under your control are secured as effectively as practically possible to ensure the confidentiality, integrity and availability of the information assets.
- Authorize user access to information under your control and removing access when it is no longer required.
Human Resources
Support the Director of Human Resources in the following:
- Human Resource Strategy for recruitment and selection of employees.
- Career development programs for employees.
- Effective manpower cost management.
- Colleagues’ welfare and relationships.
- Participate in Community programs
- Evaluation and recognition programs for colleagues.
Meetings
- The Director of Food & Beverage will attend the daily 10am operations meeting with the General Manager.
- He will also chair his departmental daily briefing.
- Attends the monthly risk management meeting.
- Will ensure a constant flow of formal communication to keep all colleagues within the department and operation aligned and well informed
