What you will be doing:
Receiving & Storeroom

Oversee all hotel receiving activity including F&B ensuring all deliveries are received at the dock (Toro excluded) and all non-food invoices are received in Birchstreet

Supervise Storeroom and Receiving team members

Oversee beverage requisitioning and consolidated purchasing processes

Implementation and use of the Beverage Inventory Module of Birchstreet to automate and streamline the process as well as improve controls

Establish, maintain and hold others accountable for following all receiving and beverage requisition related policies and procedures, including after-hours processes

Work with F&B leadership to maintain and enforce proper receiving and beverage storeroom controls including leveraging systems and technology to ensure strong and efficient controls
Food & Beverage Cost Control
- Ensure proper quality, quantities and pricing opportunities are met
- Provide monthly reports and analysis to chefs to ensure compliance with Foodbuy contract to maximize incentives and rebates
- Produce daily F&B flash reports
- Review AP entry of invoices for accuracy
- Monitor receiving, to ensure invoices received matches invoices posted for all Food andBeverage Cost of Sales items
- Prepare a reconciliation for AP to Receiving for Food purchases each month
- Sox Compliance:
- Audit Silverware Prices to Printed Menu Prices to Approved Prices for SOX purposes including compiling the SOX binder for annual review. This includes a Competitive set analysis.
- Prepare POS voids report
- Ensure compliance with all items in the F&B section of the SAQ
- Ensure Beverage Inventories are completed monthly for the beverage storeroom and Bourbon Steak Wine
- Conduct regular inspections on conditions of all storerooms
- Monitor Cash Bar Controls for Special Events and Banquets as needed
- Maintain the Fintech receiving log semi-weekly and complete at month end
Your experience and skills include:
- F&B, storeroom, receiving and/or cost control or equivalent experience required
5+ years in hospitality accounting or equivalent experience preferred; 2-3 years management experience with supervision required - Ability to multi-task in a high speed environment
- Experience with inventory management and purchasing software preferred
- Experience handling food and beverage invoices preferred
- Microsoft Excel experience required with an understanding of lookups, macros and pivot tables preferred
- Excellent written and verbal communications skills
- Excellent interpersonal skills
