Executive Pastry Chef 
You will play a pivotal role in our kitchen working alongside a fantastic team. Supporting the Executive Chef and leading the team to success.

What you will be doing:

  • Actively share ideas, opinions and suggestions to improve the environment and menus
  • Responsible for the direct supervision of all employees engaged in the pastry kitchen
  • To maintain good employee relations. 
  • To write and check standard recipes for all dishes to ensure proper portion control, uniformity of taste and quality for approval of the Executive Chef. 
  • To write on a daily basis food requisitions and kitchen transfers in order to achieve the high stock rotation desired in the Pastry section. 
  • To liase with the Stewarding Supervisor to ensure that the high standards of cleanliness are maintained in all areas of the Pastry, such as machinery, small kitchen equipment, floors and fridges. 
  • To ensure the training for all pastry staff including apprentices is carried out as requested by the Executive Chef. 
  • To check on a daily basis food preparation, individual costs, quality, quantity inventories and portion control.  With the Executive Chef establish job methods and supervise on a regular basis, and correct if necessary, cooking standard, to maintain a high quality of food service on a daily basis. 
  • During service periods, to personally check and help where needed and make sure that the presentation as well as the quality of the food is correct and in accordance with the established standards. 
  • To inspect daily, all fresh foods received to ensure the quality is maintained. 
  • To attend meetings with the Executive Chef as and when required. 
  • To observe the legal requirements in respect of Health and Safety. 
  • To report any problems re: failure of machinery and small equipment to check that this is carried out in the correct manner by all kitchen employees as set out by the Health and Safety regulations. 
  • To inspect daily all food stores and fridge areas connected with Pastry and where necessary check correct storage methods to comply with Health and Safety regulations. 
  • To avoid spoilages and ensure regular turnover of food items. 
  • To ensure that the standards set by Fairmont St Andrews, Scotland policy and procedures concerning personal hygiene are maintained. 
  • To report complaints to the Executive Chef and deal with complaints in a positive manner, treating guest feedback as an opportunity to improve our standards. 
  • In conjunction with the Executive Chef carry out assessment of Pastry staff. 
  • To complete material checklists for all Pastry sections. 
  • To daily check all work has been carried out in the proper manner.  
  • To check daily function sheets with main board.

  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively and collectively as part of a team
