What you will be doing:  
  • Assists the Executive Chef in managing the performance of our team of managers
  • Preforms all secondary leadership interviews and panel screenings.  Final approver for all hourly colleague positions
  • Leads management team and colleagues by example and ensures the working environment is based upon trust, integrity and open communication.
  • Responsible for scheduling of all areas of the culinary operation, controls culinary colleague’s productivity/payroll within established criteria based on annual budgeted figures while utilizing Watson, and the payroll management system
  • Liaises with event managers, restaurant managers, stewarding and conference service managers 
  • Development and preparation of menus suitable to each area of food & beverage, focusing on quality, creativity, presentation, guest expectations and trends. 
  • Assist in oversight of birchstreet ordering and review of orders to ensure food cost % is in line with budget and forecast
  • Ensures that food is prepared according to standardized recipes and specifications to maintain consistency and ensure all quality standards and food cost standards are met
  • Ensures that all food products are handled, stored, prepared and served safely in accordance with hotel and government Food Safety guidelines
  • Manage recipe costs through the use of birchstreet purchasing system 
  • Ensuring that the kitchen work area is clean, organized and that the equipment is functional
  • Assists with recruiting and ensures that proper training and development of staff is performed 
  • Promoting teamwork within the kitchen and with all other departments, especially food and beverage service employees
  • Responsible for the kitchen operation in the absence of the executive chef 
  • Maintain clear open dialogue and communication with executive chef
  • Responsible for ensuring every employee is working effectively and efficiently as well as improving employee morale and employee relations
  • Adhere to and follow ALLSAFE health and safety protocols, ensure all colleagues are trained and held accountable for the set standard
  • Place work orders for items needing repair
  • Other duties as assigned
Your experience and skills include:
  • 8-10 years’ culinary management experience in a luxury hotel or large kitchen environment
  • Red Seal Certificate (Journeyperson’s papers) or recognized international equivalent required  
  • Safe Food Handling Certification required
  • Proven track record as an administrator, trainer and developer, and a team player with strong communication and organizational skills with all departments.
  • Demonstrated ability to build a strong kitchen team through recruitment, training and organization
  • Comprehensive understanding and working knowledge of wines, viticulture, and beverages
  • Strong leadership ability with specific strengths in quality production and innovative style
  • Working knowledge of Microsoft Word, PowerPoint, and Excel applications 
  • Aspires to become an Executive Chef with Accor
  • Able to lift, carry and pull up to 50lbs and able to constantly stand and walk throughout shift 
  • Able to withstand exposure to kitchen equipment includes large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges and freezers as well as blast freezers
