Executive Sous Chef - Banquets

You will lead the culinary team and be responsible for overseeing all culinary operations within Banquets.

What you will be doing:
• Oversee daily banquet production
• Communicate and review daily/weekly functions with Banquet Chefs and Sous Chefs
• Monitor and maintain cleanliness, sanitation, and organization of all work areas
• Walk Banquet functions and provide feedback to the team
• Banquet Culinary Management Floor Presence
• Balance operational, administrative and colleague needs
• Review Captain’s reports from prior day and address any challenges/successes
• Conduct daily shift briefings
• Ensure all kitchen colleagues are aware of standards and expectations while holding them accountable
• Meet with storekeepers to ensure quality of products are maintained
• Custom menu requests as needed
• Conduct tastings for upcoming events
• Site Inspection offerings and execution
• Review schedules, assignments, anticipated business levels, changes, and other information pertinent to job performance
• Accountability of Banquet Culinary Financial (Labor Management, Cost Control)
• Banquet Chef and Sous Chefs one-on-one weekly meetings
• Weekly review of Banquet Chef, Sous Chef, Garde Manger and Main Kitchen Scheduled coverage prior to posting
• Ensure Stewarding daily set sheets have been completed for Main Kitchen and Garde Manger kitchens
• Schedule weekly Banquet Kitchen internal health inspections and ensure HOTSOS tracking is up to date
• Review INES requisitions and candidates
Your experience and skills include:
• Executive banquet chef, executive sous chef, Garde Manger chef experience required
• Previous leadership experience in the culinary field required
• High volume hotel experience required
• Top tier 5 diamond/5 star hotel resort experience required
• Computer literate in Microsoft window, excel applications required
• Strong interpersonal and problem solving abilities
• Highly responsible & reliable
• Ability to work well under pressure in a fast paced environment
• Ability to work cohesively as part of a team
• Ability to focus attention on guest needs, remaining calm and courteous at all times
• International cuisine knowledge required
• Current trend and modern cuisine knowledge required
• Banquet menu engineering required
• P&L knowledge preferred
• Proven track record of cost control including food, labor and wastage to meet the goals and the hotel’s financial goals
