- Assist the Executive Chef to manage stocks and supplies; achieve the productivity ratios as budgeted; organize the department to suit need and optimize headcount to improve "prime cost"; carry out inventories, inputs data and explains consumption differences
- Being in charge of planning, organizing, coordinating, staffing, directing, controlling and evaluating all operations
- Developing long-range plans while resolving daily crises across the entire spectrum of the department
- Must thoroughly understand the basic principles or each component of the management system for Food and Beverage operation
- Reaching the established budget in food cost
- Organizing successfully all food promotions
- Maintaining staff turnover at a reasonable level & training
- Supervising and coordinate all menu making, pricing, food presentation, sanitation, food promoting and employee scheduling
Work Experience
- Minimum 3 years of Executive Sous Chef experience
- In-depth knowledge Vietnamese cuisine
- Knowledge of HACCP guidelines
- Fluent in English Environment and Context
- Requires active physical activities
