Responsible for overall supervision, planning, control and coordination of all activities of personnel engaged in office administration and operation of the F&B department
Function as the Business Manager for the Food and Beverage Department and as a Marketing Specialist to ensure the various outlets and banquets operate successfully and are individually profitable in accordance with the standards of the hotel
Develop and implement a strategy to fulfill the objectives and increase sales and profitability of the two restaurants and bars
- Give directions to the entire food beverage department
- Focus continually on achieving hotel profitability through revenue generation end effective cost control
- Monitor and achieve guest satisfaction targets and team member satisfaction goals
- Oversee the operational activities in all outlets and kitchen as referred above
- Develop budgets, forecasts in line with Hotel Business plan
- Select, train and coach employees
- Implements and enforces safety regulations and house rules
- Establishes control procedures in all operation aspect in accordance with the Hotel policy
- Uses all resources, labor, material and equipment effectively
- Establishes short and long term plans and goals
- Completes weekly inspection on overall outlets’ appearance ~ the maintenance of all fixtures, fittings and operating equipment
- Establishes par stock for operating supplies to ensure the smooth operation of the department
- Attends to guest complaints, requests or inquiries regarding food and services and immediately takes all required corrective measures
- Makes frequent suggestions to Management in reference to improvement of general operation, cost control and profitability
- Develops and administers F&B budget, action plan and promotional activities of the department; stimulates sales and profit, controls operating expenses
- Involves Chef in planning of menus, deciding in pricing which is market-sensitive
- Prepares monthly F&B report
- Observes, conduct and records employee performance within F&B department for development plans
Work Experience
• University graduate or equivalent diploma in Hotel Management
• At least 3 years experience in a similar position in International hotel chain
• Excellent leadership skills; proactive approach
• Fluent in English language
• Analytical tools and detail oriented.
• Hygiene principles knowledge
• Hands on and team leader
• Computer Skills required (Microsoft Office)
• Special skills in Micros POS
• Strategic thinker and team player
• Strong leadership, honest, fair and show integrity
• Opening experience
