WHO WE’RE SEEKING: We’re seeking a unique individual who will embody the heart and soul of the Fort Worth Stockyards while caring deeply about our brand and community – someone who acts as an extension of our mission, values, and culture. This person is driven to create meaningful experiences for our employees, guests, and community while simultaneously driving food and beverage sales to ensure the success and profitability of Hotel Drover and 97 W. We are seeking an individual who has the ability to lead a team to sell the vision of Hotel Drover—a vision that inspires people to come experience a tried and true Texas adventure in the heart of the Fort Worth Stockyards. ESSENTIAL RESPONSIBILITIES:
- Ensure smooth operation of a fast-paced, multiple-outlet Food & Beverage department which will include a full-service restaurant and bar, a coffee & snack bar, and catering & room service.
- Provide frequent financial analysis and performance evaluation on each of the outlets
- Create effective cost control measures and standards to manage business levels
- Develop an annual business plan for the Food & Beverage operation identifying goals, growth drivers, food quality, and service targets
- Create and manage the Food & Beverage annual budget, provide monthly variance reports and quarterly reviews to the Executive Team
- Cultivate an environment that emphasizes creating a genuine connection with our guests and visitors
- Steward the guest and employee experience
- Increase market share by partnering with the Marketing Team to create strategies that drive business throughout the hotel and Stockyards District Food & Beverage outlets
- Direct the Food & Beverage leadership team to hire effectively, plan and assign work appropriately, promote a productive and engaged team through thoughtful performance reviews and ongoing feedback, and advancing the collective growth of the team
- Ensure the team is certified in sanitation and safety techniques and complies with all sanitation/safety procedures and laws
- Masterfully and kindly negotiate items and prices with vendors
- Create and cost menus for all foodservice venues
- Develop policy & procedure manuals for the Food & Beverage operations
- Promote high visibility of Hotel Drover through active involvement in city activities and industry associations
- Ensure a challenging and exciting environment to encourage full career development and personal growth
- Understand and contribute to overall revenue management initiatives and strategies to ensure we are maximizing every revenue opportunity
- Maintain thoughtful communication with all stakeholders, internally and externally
- Manage the ongoing profitability of the Food & Beverage outlets.
- Passion and drive to create memorable guest experiences
- Strong understanding of inventory management, scheduling, planning, logistics, and distribution functions
- Entrepreneurial mindset with a commitment to success
- Strong prioritization and organization skills
- Operations-oriented mindset with a focus on day-to-day efficiencies
- Strong interpersonal and leadership skills
- Minimum of 5+ years of Food & Beverage leadership experience in a high-end, luxury hotel/resort
- Proven track record in operating a successful restaurant with catering and events experience while controlling costs and profitability
- Bachelor’s degree and/or Culinary degree preferred
