The Group Pastry Chef for Black Sheep Restaurants is responsible for managing the in-house pastry program at our centralised bakery. The bakery which is dedicated to preparing pastry and desserts for all the Black Sheep Restaurants. This person will work directly with the Head Chefs of individual restaurants, Executive Group Pastry Chef and owners. He/she should have prior experience managing professional pastry kitchen, as well as knowledge and experience with various types of global cuisines and techniques focusing on pastry and desserts. This person will also be tasked with the development for a online pastry program.
Specific responsibilities include maintaining high quality and consistency for all food, menu and recipe development, staff hiring and training.
DESIRED QUALIFICATIONS
- 9+ years professional culinary experience, dedicated to pastry. This candidate must have worked in a pastry kitchen to have a full understanding of the demands and what is needed of a pastry chef within a professional kitchen.
- 7+ years of experience in a management role – We want to see clear career progression on the candidates CV.
- Experience working to a Michelin level.
- The ability to teach pastry and gastronomy to junior team members. This is an essential part of the role as we want this candidate to pass on their knowledge and expertise to progress the junior team, to create a stronger workforce.
- Experience working in Western cities; understanding of multiple cultures and cuisines – This is very much desired so that we know that the candidate is familiar with the fact that people of different countries and cultures may need to be managed differently to help get the best results from them, and also learning different cooking techniques, styles, flavor profiles and desserts typical of that culture or country.
- Ability to manage a large team of 20 and more; recruiting, training and coaching – It’s important that the candidate has an understanding of how to manage the workforce, from the interview process, hiring, inducting, training and coaching them. As Black Sheep Restaurant grows and expands, the need to develop existing and hire more team members is essential to the growth of the business.
- Educational background in Culinary Arts and Pastry demonstrating theoretical and practical knowledge of the industry and job role.
- Experience curating and designing menus and recipe development – This is imperative to this role, as the candidate will be responsible for curating new recipes and putting new dishes on existing and new restaurant menus.
- Recognised through accolades and awards within the industry.
- Strong track record of managing kitchen costs, stock and waste – We need to ensure that the candidate is business savvy with strong business management skills. We need to ensure that we are making money as a business and increasing profit margins at all opportunities.
- Superior English written and oral communications skills as the business language used in the group is English.
- Creatively minded with the ability to curate and design menu items and engineer recipes. This candidate should come from a background of opening new sites/pop-ups and regularly updating menus.
