Group Director Restaurants, Bars & Events – Corporate Office

Headquartered in Hong Kong, Wharf Hotels is the hotel management company for Niccolo and Marco Polo Hotels.  The expanding hotel group is seeking a Group Director Restaurants, Bars & Events with a solid food & beverage and senior leadership experience at the Corporate Office in Hong Kong. Assisting the Vice President Operations, the Associate will be responsible for the food & beverage function at Wharf Hotels.

Your Skills:

New Hotel Projects Market Research

  • To conduct in-depth F&B Market research and document recommendations in a detailed report prior to completing the hotel food & beverage design.
  • To establish concept statements for all food and beverage outlets with a design brief to be given to the Project Architects and Interior Designers.
  • To assist the Projects Department and kitchen consultant with Kitchen and back of the house space planning, workflow and equipment selection.
  • To establish, specify and quantify all F&B HOES requirements as per owners budget and in the absence of a budget recommend a realistic budget.
  • To establish specifications for tabletops and buffet accessories for all F&B outlets. To constantly look for new ideas and give input to suppliers on new innovative items in the area of accessories, tabletops, amenities and other F&B service items.
  • To closely monitor the competition and trends in cities Wharf Hotels operates hotels in terms of new ideas, guest service and product standards to ensure that Wharf Hotels maintains a market leadership position.
  • To ensure that the F&B management teams in new as well existing hotels, fully understand and adhere to Wharf Hotels’ product and service standards.
  • To develop design concepts for the signature F&B outlets.
  • To work with the uniform designer on a total uniform package.
  • To work with the team on F&B pre-opening & operating budgets.

New Hotels Concepts 

  • To coordinate and assist the incoming hotel management team to ensure that the approved food & beverage concepts are fully implemented as intended.
  • To assist with developing training and orientation material and assist in training of supervisors and department heads.
  • To conduct a 90 as well as a 30 day pre-opening review to ensure that the hotel will be ready to be open.
  • To actively participate in the opening task force to ensure that all approved concepts, service standards, buffet and plated food presentations are as per established standards.

Existing hotels 

  • To direct and coordinate food & beverage operations in all Wharf Hotels owned and operated hotels. Recognizes and resolves operational issues through coaching.
  • To conceive and direct the development and implementation of operational concepts.
  • To enforce consistent application of group standards, systems and procedures and evaluate product quality
  • To assure consistent delivery of the desired guest experience; supervises new product introductions and monitor property management activities.
  • To review, monitor and critique financial performance to meet budgeted F&B results.
  • To prepare, organize and lead annual RB&E Summit and work with vendors for sponsorship, enlist guest speakers.
  • To work closely with WHM Group Purchasing to identify and negotiate with preferred vendors for HOES, beverage and food. Specify requirements for Niccolo and Marco Polo hotels.
  • Together with the hotels’ management team to develop marketing and sales promotional plans and assist in the coordination of the programs and encourage the collection of information relating to guest experience.
  • To review all F&B annual marketing plans.
  • To initiate and track company-wide implementation of signature dishes and beverages as well as other WHM projects and work closely with WHM Marcom and Purchasing team to prepare launch.
  • To direct effective human resource development of F&B management. Assures that effective employment orientation, training and development are in place.
  • To recommend and approve capital budget projects and monitors standards of maintenance and repair.
  • To review and recommend necessary preventive maintenance and safety programs. 
  • To develop a Wharf Hotels F&B quality standard program and communicates with hotel managers and the F&B team to assure that all quality standards are consistently met. Conducts F&B audit when visiting hotels and does follow-up where and when necessary.
  • To review and analyze F&B related GSS ratings and recommends plan of action to improve ratings to exceed the groups objective to be rated as “very good”.

You are:

  • Minimum 10 years experience in multi-unit food and beverage operations for international hotel brands.
  • Successful prior experience in F&B management in a similarly styled property position or with prior multi-property accountability including developing planning and implementing successful new restaurant concepts in new and existing hotels.
  • Oral and written fluency in English is mandatory. Mandarin is an advantage.
  • Exceptional leadership abilities with strong problem solving and decision-making skills.
  • Personal maturity and interpersonal skills required include: Insight; emotional stability; objectivity; awareness; teamwork; communications; flexibility; integrity and empathy needed to be successful in a multicultural environment.
