In-Room Dining and Refreshment Center Manager

The In-Room Dining and Refreshment Center Manager will coordinate, supervise, and direct the In-Room Dining operation (including Refreshment Center). The In-Room Dining and Refreshment Center Manager is expected to ensure consistent delivery of not only memorable cuisine, but also outstanding guest service and brand standards. The candidate will have a proactive approach to hospitality, and will constantly strive to innovate and implement new ideas to enhance our service product. This leader will also have exposure to our Banquets and fl.2 Restaurant operations.

What You Will Be Doing:

  • Ensure all IRD & RFC departmental standards and procedures are being consistently followed.
  • Visible presence and active operational support with IRD team during service; inspecting and expediting orders the same as in a restaurant environment.
  • Closely monitoring timing of IRD orders and calling guests to communicate any discrepancies from quoted delivery times. 
  • Works closely with Royal Service to continuously improve the guest order experience and communication.
  • Regular training, coaching and counseling for IRD & RFC colleagues to ensure that we have the most dynamic, knowledgeable, and passionate team in the industry.
  • Conduct ongoing training and testing on brand standards.
  • In conjunction with the Pastry Team, review the amenity selection quarterly and work to improve and evolve the amenity program.
  • Ensure consistent, prompt, and flawless amenity deliveries and an effective tray pick pick-up system.
  • Personally conduct daily floor walks to inspect Refreshment Centers and IRD tray pick-ups.
  • Promptly and professionally follow up and resolution on guest issues and SCORE’s, including external and internal channels.
  • Ensure that all equipment and tools to do the job is in good repair and well maintained. Partner with the Engineering team for any preventative maintenance needs and develop a 12 month plan on necessary purchases.
  • Coordinate all aspects related to events for Condo owners including scheduling colleagues, set-up, breakdown, and billing.    
  • Approve beverage and IRD menus by consulting with chefs and F&B leaders; evaluates popularity of past menu options and availability of seasonal ingredients; estimates cost of ingredients; monitors the evaluation of the quality of product.
  • Actively develop and participate in the hiring, scheduling, training and personal development for all In-Room Dining and Refreshment Center colleagues.
  • Ensure the implementation and compliance of minimum standards as outlined in the Fairmont Food and Beverage Core Standards.
  • Perform/oversee various administrative functions such as: preparing weekly schedules based on productivity standards, completing purchase orders, POS/Avero usage, reporting & maintenance, monthly forecasting and month-end commentary.
  • Attend monthly departmental meetings to promote effective communication and to discuss goals, development, action plans for hotel and departmental initiatives as well as budget and monthly financial forecasting and reviews.
  • Actively participate and ensure strong departmental representation on other hotel committees and activities.
  • Consistently maintain professional, friendly and engaging relationships with colleagues and guests.
  • Other duties as assigned.

Your Skills and Qualifications:

  • Minimum 3 years progressive Hospitality Management experience, preferably in a Food and Beverage setting.
  • Degree or Diploma in Hotel Administration from a recognized University/College is an asset.
  • Strong Culinary knowledge an asset
  • Must be a creative leader, possessing a high degree of professionalism, human resources and administrative skills, ambition, drive and energy
  • Excellent interpersonal & communication skills both written and verbal, Analytical and detail-oriented
  • Must hold sound computer knowledge, particularly POS (Silverware) and Microsoft Office
  • Hands-on management style with ability to lead through example
  • Strong organizational skills
  • Ability to work well under pressure in a fast paced environment

Physical Aspects of the Position (include but not limited to):

  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 50 lbs
  • Occasional kneeling, pushing, pulling, lifting
  • Occasional ascending or descending ladders, stairs, ramps

Visa Requirements: Must have proof of valid U.S. work authorization.
