Pastry Sous Chef


Do you have a heart to serve and love being part of a team? As a Pastry Sous Chef, you will be responsible for the entire Pastry and Bakery operation of the Hotel and Catering set up. Must be passionate, committed, flexible and a team player.

You will have to perform and delegate tasks to a multicultural team and to ensure a superior production and presentation of high-quality desserts pastries and bakery.

What you will be doing:

  • Ability to handle multiple tasks as well busy Banqueting, outside catering & Volume production with an eye to detail and presentation
  • Stay up to date with latest culinary Trends and create ideas into better and consistent implementations throughout the Culinary Operations.
  • Preparation and presentation of quality desserts, Pastries items.
  • Presentation and preparation skills of plated dessert and buffet set ups required continues improvement and upgrades.
  • Handling of the fully implemented HACCP guidelines as well as general health & safety in the workplace
  • Cake, Show Pieces Skills to be developed within the team
  • Creating in conjunction with the Executive chefs of menus, buffets and “specials” which meet the needs of the target market and are in line with the operating concept for the restaurant.
  • Managing the Pastry Team
  • Great people management required and to work in multicultural environment.
  • Must have culinary Pastry Certificate and accredited education requirement.
  • Strong leadership and organization skills with a “hands on approach”
  • Bring a basic computer knowledge such as MS Word, MS Excel, MS Power Point, MS Outlook and able to work with hotel ordering system
  • Would be great to bring an interest into Food Promotions and Competition on a Local and International Level to the operation.
  • Have a clear understanding of the monthly food cost goal of the kitchen.
  • Develop standard recipes which allow all outlets to operate at an acceptable food cost.
  • Maximize colleagues’ productivity in order to minimize payroll cost.
  • Monitor operating costs and take corrective action when necessary to reduce expenses.
  • Will be required to work in all kitchens and may work in shift times or week end, may also include working on outdoor venue depending on business level demand.
  • Set an example for all staff in regard to customer recognition.
  • Ensure that equipment is correctly used and maintained.
  • Ensure effective and detailed training is undertaken throughout the assigned department / area on the maintenance and correct use of equipment.
  • Actively participate in the prevention of breakage and wastage in the respective area.
  • Uphold the policies that ensure the safety and security of assets / stock.  
  • Must have strong knowledge of all current menus and food promotions available for the department.
  • Notify the Executive Chef of any possible improvements / innovations that may improve business.
  • Involve employees in decision making to enhance development and focus on common goals.
  • Attend training courses as instructed by the Executive Chef.
  • Implement training for staff instructed by Executive Chef.
  • Encourage staff attendance at training courses and follow through in utilization of the newly developed skills.
  • Ensure all staff carries out their duties whilst observing all hotel policies outlined in the staff handbook.
