Job Description
The Rocky Mountain Apprentice 3 year culinary program is a program like no other. We offer you the following hands on training with rotations throughout our entire culinary department to list a few our staff cafeteria which servers 1500+ colleague meals a day using locally sourced ingredients, our full butcher shop where we break down whole animals, and make our own sausages, to our signature 1888 Chop House in total we have 12 different a la carte and production areas that you would be exposed to.  We have monthly demos and friendly black box competitions.  In the summer the apprentices learn how to operate a business as we participate in the weekly local market downtown for 18 weeks.  In the past we’ve had a booth selling fresh baked bread that is made in house with the help of our bakers and also an apprentice.  The apprentices are responsible for looking after the greenhouse that we have on property.   The hotel does sponsor the apprentice to attend school at either SAIT or NAIT for their 8 week learning blocks.So come learn and work with our talented team of chefs creating world class dining experiences for our guests.   This is your opportunity to work in a kitchen committed to preparing and serving the finest meals while achieving your goals at gaining your red seal to open your doors to endless growth opportunities.

What you will be doing:  
Reporting to the Sous Chef on duty:
  • You will be rotated around all outlets and production kitchens to enhance your ongoing learning and development      
  • Participate in monthly apprentice demos and black boxes, as well as daily meeting Prepare, cook and service all food items for a la carte and or buffet menus according to the recipes and standards 
  • Have full knowledge of all menu items in your area; participate in the creation of daily features and promotions
  • Receiving product, and storing with proper rotation                                          
  • Clean and sanitize all equipment, counter tops, and shelves, reporting any areas and equipment in need of a work order 
  • Commitment to the ongoing success of our culinary team
  • Enforce a safe work environment for all colleagues and guests by upholding the safety rules provided by fairmont banff springs and the culinary department         
  • Foster an environment of cooperation within the department, and between other departments within the hotel, encouraging participation and input from all colleagues, while promoting professional work habits that will ensure that the department is being guided at all times by fairmont’s mission, vision and values
  • Consistently offers professional, engaging and friendly service 
  • Ability to work all shifts including overnights as the hotel operates 24 hours a day
  • As a registered culinary apprentice, you will be required formally participate with one of the committees within the hotel (i.e. Health & Safety, Sustainability, Service Plus, or Social Committee). As an active participant, you will be required to attend monthly meetings as a representative of the culinary department, and be accountable for sharing that information, or taking any appropriate follow up within the culinary department.  
  • Actively share ideas, opinions, and suggestions in daily shift briefing
  • Adhere to and follow ALLSAFE health and safety protocols
  • Other duties as assigned
Your experience and skills include:
  • High school diploma
  • Safe Food Handling Certification
  • WHMIS or similar training
  • Previous experience is an asset 
  • Constant lifting, carrying and pulling up to 50lbs
  • Constant standing and walking throughout shift 
  • Exposure to kitchen equipment includes large and small ovens, stoves, steam kettles, mixers, sheeter, fryers, rational ovens, steamers, tilt skillets, fridges and freezers as well as blast freezers

Visa Requirements: Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
