ROLES & RESPONSIBILITIES
The Sous Chef for Black Sheep Restaurants is responsible for managing kitchen operations, assisting in curating menu, and training the team. This individual will work directly with the owners, Head Chef, and Group Chef. He/she must have prior experience in this role, knowledge and experience with various global cuisines and techniques.
This role will also be tasked with concept development for various forthcoming projects as well as current operations.
Specific responsibilities include but are not limited to: maintaining high quality and consistency of our culinary programs, continuous menu and recipe development, staff hiring and training, and managing the day-to-day operations of our kitchens.
DESIRED QUALIFICATIONS
- A minimum of 8 years of experience in professional kitchens
- Experience working with intimate kitchens as well as large-scale operations such as hotels
- Experience in Fine Dining, prior experience in a Michelin-starred kitchen is REQUIRED
- Certificate in Food Production, Commercial Cooking, or Culinary Arts
- The ability to train a team of 10+ in all aspects of kitchen operations, including culinary techniques, food safety, and consistent execution
- The creativity and ability to curate and develop menus as well as costing, purchasing, and sourcing items, and creating specials that are in line with the restaurant’s vision and style
- Strong knowledge of Western cuisines and cultures, inclusive of European and American styles of cooking
- Experience working for restaurant groups with multiple outlets
- International experience in a major food city such as London, Paris, New York, Sydney is highly preferred
- Superior English written and oral communications skills
