The Marco Pierre White Steakhouse Bar and Grill is located within the Mercure Bridgwater Hotel which is at the heart of Bridgwater town center and offers 119, 4 star bedrooms.


This Sous Chefs position is for someone who has a previous experience in a fast paced kitchen ideally a branded fresh food concept.

The position involves-

·        Managing a team of up to 10 staff

·        To work within defined Mercure and Marco Pierre White minimum standards which will apply to all food & beverage operations, and to ensure that these standards are continuously maintained.

·        Implementation of all brand specific standards and menus.

·        Running the kitchen when the head chef is not on duty

·        Ensuring your brigade has high culinary standards

·        Managing food purchasing and storage

·        Maintaining a safe and hygienic kitchen environment

·        Ensure training of all staff to the required standard, identifying training needs and co-ordinating training activity.

·        Monitor the performance of all kitchen staff.

·        Providing guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating

·        Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance

·        Work with head chef to maintain kitchen organisation, staff ability, and training opportunities



Work Experience

The successful candidate will have previous experience of working in a high volume kitchen operation, with a proven track record of delivering results.

·        You will need a passion for hospitality, exceptional customer service, great quality fresh food, customers and people

·        Have at least a level 2 food hygiene qualification. Level 3 –will be trained in House

·        A strong, ambitious individual, looking for a challenge, driven by 100% customer satisfaction.

·        Open minded and flexible with the ability to innovate at all times.

·        Be a team player with the desire to develop yourself and those around you.

·        Adaptable in their approach and able to work in a fast changing environment 

·        Not afraid of hard work and the ability to be hands on.
