Ready for a sizzling career move? The Mercure Townsville has a fantastic opportunity for the pivotal role of Sous Chef  in our kitchen working alongside a fantastic team. The food you prepare, cook and serve makes our guests smile and wanting more. 

Reporting directly to our Executive Chef, you will assist in all aspects of the Kitchen operation, including leading and driving the team. To succeed in this role, you must thrive working in a dynamic, fast-paced kitchen and perform multiple tasks at once. You take pride in developing your team members and have the ability to assume responsibility and work autonomously. We are open to Sponsorship for the right person.

What you will be doing:

  • Food preparation and plate presentation for a la carte, buffet, room service and functions.
  • Assist in ensuring budgeted profit targets are met.
  • Assist with Kitchen recruitment and selection.
  • Assist with the supervision, motivation and training and development of all kitchen staff.
  • Flexible approach in adapting to guest requests.
  • Responsible for stock control; ensuring that stock levels are in line with company
  • Assist with rostering, wage costing, menu costing & design.
  • Maintenance and cleanliness of kitchen equipment.
  • Preparing and storing food in accordance with hygiene legislation.
  • Working in a team environment, ensuring timely service and a high standard of presentation of our hotel product.
  • Liaise with all departments

Your experience and skills include:

  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively and collectively as part of a team
  • Trade qualification and experience in a similar role
  • Demonstrated ability to maintain food safety standards and understanding of HACCP.
  • Experience in both Banquets and Al a Carte
  • Passionate about delivering exceptional food
  • Proactive and Decisive
  • Excellent interpersonal skills 
  • Flexibility to work a seven-day rotating roster, including early mornings, late evenings, weekends and public holidays
