As a Sous Chef with Fairmont Hotels and Resorts you will lead a team of culinary professionals in creating spectacular dishes that will create memorable dining experiences for our Guests. Your experience in managing various aspects of a kitchen will be reflective in positive Guest satisfaction and Colleague engagement results.
Hotel Overview:
Fairmont Wuhan is situated in the newly developed Wuhan Central Business District (CBD), surrounded by banking corporations, top companies and high-end residences.
318 key with state of art design hotel guestrooms, minimum 50sqm.
Approximately 2,500sqm of meeting & banqueting space, Willow Stream Spa, Swimming Pool and Fitness Center.
Summary of Responsibilities:
Reporting to the Executive Chef , responsibilities and essential job functions include but are not limited to the following:
  • Maintains excellent grooming standards at all time.
  • Participate in the planning and costing of menus.
  • Develop and write standard recipes.
  • Develop new dishes and products.
  • Ensure that outstanding culinary technical skills are maintained.
  • Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly.
  • Demonstrate Awareness of OH&S policies and procedures and ensure all procedures are conducted safely and within OH&S guidelines and ensure your direct reports do the same.
  • Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures.
  • Be familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly
Qualifications:
  • Certificate or diploma in hospitality or related field.
  • At least 5years similar working experience in 5 star international hotel.
  • Retail or customer interaction experience.
  • Food and /or beverage knowledge (personal interest/ professional).
Physical Aspects of Position (include but are not limited to):
  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 30 lbs
  • Occasional kneeling, pushing, pulling, lifting
  • Occasional ascending or descending ladders, stairs and ramps
  • Constant standing and walking throughout shift
