Finance Executive (F&B Control)

Job Description
  • Establishing and maintaining local policies related to the receipt of issuance and general controls of food and beverage when needed
  • Monitoring monthly food and beverage inventories count and extension
  • Establishing and maintaining a database for food and beverage inventory stock including up-to-date pricing
  • Coordinating, attending and monitoring all food and beverage physical inventories to ensure accuracy
  • Ensuring proper storage and issuance of all food and beverage items
  • Establishing and maintaining a cost allocation transfer system for food and beverage supplies to the various departments 
  • Preparing journal entries on cost transfer and month end inventory adjustments for each financial period closing.
  • Preparing monthly forecast on food and beverage cost of sales
  • Analyzing all food and beverage costs on a monthly basis and making recommendation of alternatives on cost savings
  • Price all food and beverage storeroom requisitions and compute the following:
      • Monthly food and beverage actual costs by outlet
      • Monthly storeroom variances for food and beverage
  • Assisting management in menu costing in order to establish menu item sale prices.
  • Establishing and monitoring the procedures for the following operations in banquets and food and beverage outlets:
  • Cash Bars
  • Menu Items (ensure that they are properly rung up the system)
  • Liquor pouring procedures
  • Guest check void controls
  • Cash handling and check settlement
  • Operation inventories and reconciliations
  • Point of Sale system user capabilities and controls
  • Portion controls

 

 

  • Preparing F&B reports as requested by management.
  • Maintaining accuracy of POS System data and investigating any discrepancies
  • Monitoring and recording all house account meals and entertainment expenses and reporting any non-compliance to the Assistant Controller for follow up with the hotel management 
  • Performing any other spot checks as prescribed in the Food and Beverage Manual.
  • Maintaining a close working relationship with the Food and Beverage management team
  • Attending Food and Beverage meetings to review and assisting with solving any cost related issues
  • Performing other additional duties as needed
